University invents new freezing system

Pamukkale University (PU) Engineering Faculty has developed a system that refrigerates any kind of foodstuff, fruit and vegetable in two minutes and freezes them all in just five minutes.

The Scientific and Technological Research Council of Turkey (TUBITAK) also supported the “Vacuum Refrigeration System Development and Applications in Food Industry” that commenced at the laboratory in Clean Energy House of the PU a while ago and is set to cost YTL 187,000.

“In refrigerators and cold storage, products take about 30-60 minutes to cool, whereas the system that we developed enables refrigeration in two minutes and that provides a great opportunity to save energy. Such a system has not existed before. We are the first in the world to refrigerate Doner and other meat products using a vacuum cooling system. Furthermore, warm products placed in cold storage can warm already refrigerated products. Apart from wasting a vast amount of time and energy, this naturally reduces the life span of the product. With our system, there is no such risk,” said Associate Professor Harun Kemal Ozturk of the PU Engineering Faculty, underlining the revolutionary status of this invention.

Ozturk stated that the system can be applied to any kind of product that is not harmed by vacuuming, indicating that it should certainly be developed and used in industry. Hande Mutlu Ozturk, studying for her master's degree and taking part in the project, said that applying this system in the food sector would provide great advantages. Ozturk emphasized that while preserving the food value, the system spends five times less energy. As a patent for the system is not officially registered yet, no information was given about its refrigeration technology.

Interesting that such a system has not existed until now.

One thing should be mentioned, the system above definitely is not the only method to freeze in very short time. In the area of the food industries, there are existing already a load of methods how to shock freeze stuff, for example vegetables.

The vaccuum freezing should have the advantage that first of all, the energy consumption is lower, but also that the food does not have to be confronted with extremely low temperatures.

Definitely something that will find its place in the food industries.
