Ah, but it's not the meat so much as the preparation. An inch thick at least with good marbling. A little bit of time for each side (no piercing of the meat) over high heat. Salt and pepper and that does it for me.
Oh, yeah, a BIG pile of mashed potatoes too.
Where's Sglaine? I'll bet he's got a recipe somewhere for a good steak.
