Because if we have ministers in office we'll be a Theocracy, just like we were when we signed the Declaration of Independence, and when we created the Constitution. Weren't the majority of the names on those documents Christian Ministers? Hmmm, I forget.

Romney probably would make a good choice. If McCain doesn't take Huckabee or Romney then religious conservatives won't be excited and they'll stay home. However if McCain
does take Huckabee the economic conservatives won't be happy and will largely stay home.
Romney would bring out the social conservatives, and the economic conservatives in even larger numbers (meaning more financial contributions), and a McCain/Romney ticket would bring out defense conservatives in record numbers. And at the same time, McCain will still be drawing in independents, there aren't many independents who really look at the VP.
Romney would be a much better VP choice for McCain, but it probably won't happen. There is too much animosity between the two, although McCain could finish this game early if he took him as the VP, it almost seems as though Huckabee is in this for the long haul.
